* Add new scan option `generator_factory`

Allows providing a pre-configured OpenApi `Generator` instance.

* Replace callable generator_factory with `CustomGeneratorInterface`

Introduces a typed interface instead of a raw callable for the generator_factory scan option, improving discoverability and type safety.

* Support class name string for generator_factory option

Allow generator_factory to accept either a `CustomGeneratorInterface` instance or a FQCN string implementing the interface, making it compatible with config file serialization.
