client: adapt to niquests 3.19.0 header typing

niquests 3.19.0 types response headers as CaseInsensitiveDict[str, str],
so the bytes-decoding branch in save_image_versions2 is now unreachable;
remove it along with the test that exercised it. Session headers keep
invariant str | bytes keys, so update() is now passed items() to match
the covariant Iterable[tuple[...]] overload instead of the Mapping one.
