fix(openalex): term mode defaults to the monolith again; split stays opt-in

A present-but-rare query ("roaring bitmaps", live) matches nothing in the
term split set's top tiers and descends all 243 splits sequentially —
114 requests / 76+ s of round-trip latency for 675 KB — where the
monolith's global postings answer in ~6 reads. The split choice is now a
tri-state preference over per-mode defaults: trigram stays split-by-default
(tier pruning caps its worst case; server mode owns the path when on),
term defaults to mono with ?split=1 the deep-linkable opt-in. The stale
"loading term split set…" status is replaced once the search starts.
