feat(openalex): server-default trigram, live in-flight perf, paging perf section

Server (Lambda) mode is now the trigram default on the full dataset — warm
queries move ~1-3 KB in well under a second where the client-side
intersection issues dozens of ranged reads — with the toggle kept; turning
it off re-engages the split-set client default. URL params now encode the
exceptions (srv=0 / split=0 opt-outs; legacy srv=1/split=1 links are
no-ops), and the split set leaves the first-search critical path unless a
client-split search actually needs it.

The perf bar gains live in-flight feedback: a token-guarded ticker streams
the per-query request/byte counters (counted as each Range read is issued)
into the panel and a spinner + counter on the collapsed toggle row, so long
scans visibly progress. Prev/Next moves report under a new "Paging" group
(last move + per-query cumulative) instead of overwriting the First page
rows, covering the record fetches every page move actually costs.
