feat(openalex): split-set index is the trigram default in the demo

Split mode turns on automatically once the RRSS manifest boots; the URL now
encodes the exception (split=0) instead of the rule, keyed on the user's
opt-out so it survives a refresh taken before the split set finishes booting.
The split-set boot moves onto the boot critical path (~50 KB) unless the URL
opts out, forceSplit datasets stay pinned on, and leaving server mode
re-engages the default through the same recompute the mode radios use.

docs(tasks): file 031 split-set default migration (live 484M bench table,
parity gaps, S3 monolith retirement plan) and 032 pragmatic BM25 rerank
(additive .rrb impact sidecar + norms, candidate-window rerank, RRF hybrid).
