Fix display-name whitespace and add @classmethod to validator (#300)

- safe_contracts_service: strip leftover whitespace after removing the
  'Gnosis' prefix, so a spaced name no longer yields a leading space in
  the display name.
- models: add @classmethod to the 'to' field validator for consistency
  with the other validators and Pydantic v2 convention.
