feat(web,web-react): add support for selected color variant in Icon component

- Introduced a new 'selected' color variant in the SCSS
and updated the corresponding preview and README files.
- Updated the Icon component to include 'selected'
in the available color options.
- Enhanced demo components to showcase the selected color variant.
- Added tests to ensure the selected color class is applied correctly.
