fix(ci): write docker-image SBOM to disk so release upload finds it

The release step globs for docker-image-cyclonedx-xk6-kafka-<tag>.json on
disk, but anchore/sbom-action's artifact-name only names the uploaded
workflow artifact and never writes that file to the workspace, causing the
release job to fail with "no matches found". Add output-file so the SBOM is
written locally under the expected name, and pass image so the step actually
scans the pushed image instead of the source tree.
