refactor: rename Telemetry to RequestSnapshot

Rename `TelemetryData` to `RequestSnapshot` to better reflect its
purpose
as a point-in-time record of a DNS request lifecycle rather than general
telemetry.

- Renamed files, types, and variables across `dispatcher.go` and the
  `metrics` package.
- Updated constants to reflect the new naming convention.
