fix: remove redundant defaults and backward compat

Remove redundant security arguments (defaults in Clevis), fix
docstring about environment variables, and remove backward
compatibility Config type alias - use RoomzConfig directly.

Addresses review comments:
1. Fix docstring - env vars only via ${VAR} in TOML
2. Remove redundant security arg in app_tui.py
3. Remove backward compat Config alias
4. Remove redundant security arg (second instance)

All tests pass, lint clean, type check clean.
