docs: clarify S3 SDK as optional peer dependency (closes #290) (#324)

The README claimed "ZERO dependencies" unconditionally, but the AWS SDK
v3 S3 packages are peer dependencies. Since #316 these are declared
optional, so a fresh `npm i lambda-api` no longer pulls them in.

Update the language to "ZERO required dependencies" and document the
optional S3 SDK install in both the intro and Installation section.
