test: preserve unix-stream client close timing in runClient conversion

Code review caught that TestParse_unixStream's original client closed its
connection via defer the instant the goroutine returned (right after the
ping/pong exchange), whereas the runClient conversion registered
closeOnCleanup and held the connection open until end-of-test cleanup. Pass
closeAfter: true to restore the prompt close, matching the pre-refactor
lifecycle.

Also document the load-bearing nil vs []byte{} payload distinction on
clientConfig.payload so the explicit empty slice in the header-only tests is
not mistaken for redundant.
