feat(openalex-demo): mode-1 "Lambda embeddings" toggle (EmbeddingGemma query embed -> Gemma RRVI)

Adds a server-side toggle next to the existing Server-side-search switch that
swaps the semantic/hybrid query-embed source from the in-browser model2vec
embedder to the embed-lambda (EmbeddingGemma-300M), searching a Gemma-embedded
RRVI. Config-gated: the toggle stays hidden until both EMBED_LAMBDA_URL and a
dataset's rrviGemma are set, so no dead control ships in the live demo. The
Lambda embed round-trip is metered into the perf bar's Embed-query row.
