refactor: Remove key atomization in `SchemaUtils.to_typemap/2` (#3534)

`to_typemap/2` now preserves BigQuery schema field names as strings
instead of interning them as atoms via `String.to_atom/1`, avoiding
unbounded atom-table growth from user-controlled field names.
`SourceSchemas.typemap_to_json_schema/1` is updated to accept string
keys.
