fix: restore original logger and guard progress bar

Save and restore the builder's original logger to avoid leaking a temporary logger outside the build. Import Psr\Log\LoggerInterface and capture the original logger before replacing it. Only attach a ProgressConsoleLogger when output verbosity is normal and the output is decorated (so the progress bar is usable). Wrap the build in a try/finally to ensure the progress bar is finished and the original logger is restored even if the build throws. Removed the unconditional ConsoleLogger fallback so the builder keeps its existing logger when no progress bar is used.
