docs: replace template boilerplate with Postal project README and docs

Rewrite README as a real project overview for the Postal email library
(Phase 1 focus), and update package metadata and MkDocs content to match:

- README: features, quick start, transports table, events, testing, roadmap
- composer.json: expand keywords for Packagist discoverability
- mkdocs.yml: fix repo_url, edit branch (develop -> main), site name, copyright
- docs/: real index + installation pages; correct requirements to PHP 8.2 / CI4 4.7
