fix: point workflows at archipelago-ea-* service names (#122)

* fix: point workflows at archipelago-ea-* service names

The non-EA archipelago service definitions (archipelago-core, stats,
ws-connector) were removed from decentraland/definitions, leaving only
the archipelago-ea-* variants. Update the auto-deploy and manual-deploy
workflows to reference the current service names.

- docker-next.yml: rename dev deploy jobs/service-names to archipelago-ea-*
- docker-release.yml: rename prd deploy jobs/service-names to archipelago-ea-*
- manual-deploy.yml: drop the removed non-EA service-name choices

* docs: update x-api-id identifiers to archipelago-ea-* names

Align the OpenAPI x-api-id metadata with the EA service names; the
server URLs in these files already point at the EA variants.
