widget: make CompletionEntry.FocusGained overridable

Resolve the completion popup's canvas and position against the extending
widget (recorded via ExtendBaseWidget) rather than the embedded value, so a
subclass can override FocusGained without the popup lookup failing. Mirrors
fyne's own Select/SelectEntry, which use super() for the same reason.

Replaces the earlier OnFocusGained callback with the idiomatic fyne
subclassing approach.
