fix(client): redact api_key from Inspect output

Derive Inspect with `except: [:api_key]` so logged or inspected
`%BambooHR.Client{}` structs no longer leak the API key. Adjust the
`new/1` doctests to assert on individual fields instead of the full
struct, since the derived inspector renders the struct in `#Module<>`
form. Add a regression test that inspects a client and asserts the
key is absent.
