feat(esign): add Esign family read-only resources (#113)

* feat(esign): add Esign family read-only resources

Adds the five Esign API resources:

- Humaans.EsignTemplates
- Humaans.EsignInstances
- Humaans.EsignBulks
- Humaans.EsignBulkRecipients
- Humaans.EsignBulkTokens

All are read-only via the API; each declares actions [:list, :retrieve]
and a guard test asserts the write actions are not exported.

* docs(esign): expose Esign resources via helpers and README

* chore(docs): sort resources alphabetically, separate user endpoints

* test(esign): add smoke tests for Esign helper functions
