docs: sync README with current implementation and fix Go version

- Add ProxyJump, session recording, connection log persistence,
  read-only session sharing, active session management, and theme
  switcher sections to user guide and API reference
- Update architecture diagram and design table to reflect new endpoints
  and subsystems (connlog, recording, share, viewer mode)
- Add internal/connlog and internal/recording to directory tree
- Add missing env vars: CORS_ALLOWED_ORIGINS, KNOWN_HOSTS_PATH,
  DB_PATH, RECORDING_ENABLED, RECORDING_DIR
- Replace stale coverage table with actual go test -cover results
- Bump Go version badge and prerequisites from 1.22 to 1.25 to match go.mod
- Fix localStorage note: private keys are encrypted and stored when
  saved as a profile (previously stated they were never stored)
- Add modernc.org/sqlite, asciinema-player, @xterm/addon-search to
  tech stack
- Bump docker/backend/Dockerfile builder base from golang:1.22-alpine
  to golang:1.25-alpine to match go.mod
