refactor: optimize client metrics tracking in dispatcher

- Refactored `RequestContext` to use `time.Time` instead of
`*time.Time`.
- Moved client tracking logic directly into `HandleDNSRequest` to reduce
  function call overhead and improve readability.
- Removed redundant `updateClientCount` helper method.
