docs: refresh README — dual build paths, Rust build + Catalog quick-start, 47.8M scaling

Reframe the intro (build directly with the Rust build module OR transcode a
roaringsearch index — no longer roaringsearch-only); rewrite Quick start to show
the Rust build path (write_index/write_facets/write_records + build::chunk) and
the Catalog/RrsCatalog reader alongside the Go path; note the Catalog facade in
the layout + diagram; record the 47.8M-work build (11.5 GB, ~57 min, sublinear).
