refactor(examples/openalex): dedup main.go/stream.go via shared build helpers

Reuse buildText/buildRecord/facetValue and the shared facetAccum across the
load-all and -stream paths instead of divergent inline copies; behavior is
identical (same indexed text, record JSON shape/order, facet field order,
docID==rank postings). Update README for the in-repo build path and document
-stream and the parallel Rust builder as alternatives.
