Fix blank demo page: use Vue full build for in-DOM template compilation

The demo root component relies on the in-DOM template inside #app, which
needs Vue's runtime template compiler. The default bundler resolution uses
the runtime-only build (vue.runtime.esm-bundler.js), so the template was
never compiled and the page rendered blank. Alias vue to the full build
(vue.esm-bundler.js) in the demo config and rebuild docs/.
