docs: document :args opt and Hooks.Mix module

- README: add :args usage + argument-order shape for Format, Credo,
  Test, Dialyzer; add Hooks.Mix section with options table.
- @moduledoc + package description: mention generic mix-task hook
  alongside the four dedicated ones.
- mix.exs ex_doc: list GitHoox.Hooks.Mix under "Built-in Hooks".
- test: drop stale "empty schema" wording from Dialyzer rejects-unknown
  test (schema is no longer empty).
