test: verify simulation-only requirements don't leak into NodeClaim

Add assertions to confirm that karpenter.sh/registered and
karpenter.sh/initialized requirements and labels are excluded
from the created NodeClaim, validating the exclusion logic in
ToNodeClaim() and resolveCustomLabelsFromRequirements().
