fix(pool_stats): drop schema sentinel; sanitizer-only corruption recovery (#431)

the schema-bump-as-wipe approach (added in #427/#430) was too blunt: it
nuked legitimate lifetime stats on every BB_POOL_STATS_SCHEMA_VERSION
bump, even when the on-disk data was not corrupt. bitaxe-403 lost its
accumulated lifetime stats updating to v0.24.0.

remove the schema sentinel entirely; rely on the existing sanitizer
(NaN/inf + timestamp range + cross-field consistency) for corruption
recovery. boards with known false-positive accumulation (esp32-wroom32
DPORT) can be reflashed to clear state — user-confirmed acceptable.

also drop the now-dead pool_stats_wipe_keys() and the schema test hooks
(inject_schema_for_test / get_saved_schema_for_test).
