Drop EffectiveWorkloadIdentity carryover on hybrid deployment update

UpdateHybridDeploymentRequest used to read currentDeployment.WorkloadIdentity
(user-configured only) as a fallback when the user didn't pass
--workload-identity. After the v1 migration, the read model only exposes
EffectiveWorkloadIdentity, which is populated whenever any identity is
in effect — including the Astronomer-provided default. Carrying that value
through to the Update silently pinned the platform-managed default as if
it were user-configured.

Server-side update has PATCH semantics (empty string skips the column
write), so omitting the field is the correct way to preserve current
state. Switch the hybrid path to the same nil-pointer pattern the
hosted/dedicated paths already use.
