chore: drop minimumReleaseAgeExclude entries

Renovate now waits 24h before opening PRs (set in shared
xxczaki/renovate-config), so pnpm's default 24h minimumReleaseAge
will never reject the versions Renovate proposes. The exclusions
added for @ai-sdk/gateway, ai, and date-fns@4.3.0 were one-time
workarounds for PRs opened before that config landed.
