ci+docs: address PR #163 review feedback

* Drop Gr1N/setup-poetry@v9 in favor of a direct ``python -m pip
  install`` of Poetry + poetry-dynamic-versioning. Removes the Node 20
  cutover risk flagged on release.yaml, eliminates the third-party
  Action from main.yaml and release.yaml, and removes the allowlist
  coupling for the install step.
* README.md: drop Isaac OS from the user-facing wrapper enumeration
  pending an internal decision on its visibility.
* CONTRIBUTING.md: trim the allowlist heads-up section to a one-line
  pointer at .github/CI.md, which already documents it for CI-focused
  readers.
