refactor: rename gateway → herald in e2e tests and CI

- e2e.yml: checkout HelixObs/herald, build helixobs-herald image,
  GATEWAY_MIGRATIONS_DIR → HERALD_MIGRATIONS_DIR, GATEWAY_ENDPOINT → HERALD_ENDPOINT
- e2e/docker-compose.yml: service gateway → herald, helixobs-gateway → helixobs-herald,
  GATEWAY_ADDR → HERALD_ADDR, GATEWAY_MIGRATIONS_DIR → HERALD_MIGRATIONS_DIR
- e2e/test_e2e.py: GATEWAY_ENDPOINT → HERALD_ENDPOINT, wait_for_gateway → wait_for_herald
