ci/dart-test: pick device type from the runtime's supportedDeviceTypes

f7de6a6's device-type picker sorted all iPhone identifiers lexically
and took the last. That gave "iPhone-XS-Max" — alphabetically last
among iPhones but chronologically old. iOS 26+ doesn't support it,
so simctl create errored with "Incompatible device" / SimError 403.

The runtime entry itself carries supportedDeviceTypes — Apple's
own allow-list of devices that work with that runtime, ordered
chronologically. Reading from there gives the newest iPhone the
runtime actually supports without any second-guessing.
