Add --coverage flag to build_linux.sh with automated report generation

Replace the hardcoded USE_COVERAGE=false with a --coverage CLI flag that
enables coverage instrumentation and post-test report generation.  Update
CI to use the new flag instead of sed-patching the script.  Coverage tools
are auto-detected (llvm-cov, gcovr, lcov) and output lands in coverage/.
