fix(ci): update CI paths after package restructuring

Update GitHub Actions workflow to use new package paths after
restructuring from app/ to src/roomz/:
- ruff linting: app/ → src/
- mypy type checking: app/ → src/roomz/
- pytest coverage: removed redundant --cov=app, kept --cov=src/roomz
