* docs: add Spaces feature documentation for Medplum Provider

Document the Spaces in-app AI assistant as an example implementation in
the Provider section, covering setup (project features, OpenAI key, bot
deployment, system-prompt seeding), the conversation data model, the
four-bot pipeline, the agentic tool-use loop, and the supported
translator-prompt customization point. Cross-link from /docs/ai.

* docs: switch Spaces architecture diagram to mermaid, fix example lint

Replace the ASCII pipeline diagram with a mermaid flowchart so the loop
arrow back to the translator is visible. Drop an unnecessary type
assertion in spaces-examples.ts that tripped @typescript-eslint/no-unnecessary-type-assertion.

* docs: reorder Spaces in Provider sidebar to follow core workflows

Other Provider docs use 100/200/300/400 spacing; sidebar_position 6 was
sorting Spaces above "Adding Practitioners & Data". Move to 500 so it
appears after Visits, matching the intended learning flow.

* docs: add What You Can Do With Spaces section, replace em dashes

Add an upfront overview of typical prompt categories with concrete
examples (search, clinical summary, visualizations, operational
reporting, scheduling, orders, updates) so readers see the capability
surface before the architecture. Note that writes execute live and add
a caution to review clinically significant resources. Normalize em
dashes to en dashes to match the docs style set in 25b2506b1.
