fix(bench): nest sort_maps under custom_options for inspect/2

Top-level :sort_maps isn't part of Inspect.Opts.new_opt(), so the
struct-based opts builder silently dropped it (snapshots were written
unsorted) and Dialyzer flagged save_snapshot/2 as no_return, failing
the typing check.
