chore(deps): pull django-countdown and pytest-testcontainers-django from PyPI

Both packages are now published on PyPI, so we no longer need git-tag
overrides in [tool.uv.sources]. django-countdown bumped to versioned
constraint (>=0.2.0), pytest-testcontainers-django bumped from 0.2.0
(git) to 0.2.1 (PyPI). The whole [tool.uv.sources] block goes away.
