Make gesture-handler Pressable opt-in in BaseButton.

The unconditional swap to gesture-handler Pressable in 1.27.0-beta.3
fixed onPress cancellation inside Modalize/Swipeable/native-stack on
Android with new architecture (RN 0.74+), but forced every BaseButton
consumer to depend on the new behavior with no escape hatch.

Revert the unconditional swap and expose a new optional prop
`isGestureHandler` (default false). Consumers opt in only where the
modal-cancellation bug applies; everywhere else keeps RN core Pressable.

Bump 1.27.0-beta.3 -> 1.27.0-beta.4
