Add Validator-Committer architecture and block diagram guide

- Add validator-committer-block-diagram.md with detailed Mermaid
  flowcharts for prepare, validate, and commit phases
- Document MVCC validation logic, write categorization, blind write
  resolution, and database schema/stored procedures
- Update validator-committer.md with Mermaid architecture diagram
