chore(deps): bump go to 1.26 and update all dependencies

Update go directive in go.mod, CI workflows (ci.yml, release.yml), and
Dockerfile from 1.25 to 1.26. Run `go get -u ./...` and `go mod vendor`
to bump all direct and transitive deps to their latest versions.

Notable bumps: certmagic 0.25.0 -> 0.25.3, go-pkgz/lgr 0.12.1 -> 0.12.3,
go-pkgz/rest 1.20.4 -> 1.21.0, golang.org/x/crypto 0.45.0 -> 0.51.0,
miekg/dns 1.1.68 -> 1.1.72, prometheus client_golang stays at 1.23.2.
