ci(coverage): use cargo +nightly to override rust-toolchain pin (#561)

rust-toolchain.toml pins the repo to 1.95.0 stable; without `+nightly`,
rustup honored the pin and rustdoc rejected `-Z unstable-options
--persist-doctests`. Mirrors `just cover`.
