Namespace operator.* Helm helpers to prevent umbrella chart collisions (#5245)

In umbrella chart installs, the generic operator.* prefix in the operator
chart's _helpers.tpl can shadow or be shadowed by other charts defining
the same helper names. Rename to toolhive-operator.* to follow the
standard Helm convention of prefixing helpers with the chart name.

Closes #5097
