test(store): cover entities-store invariants

mutation paths (add / update / delete / cascade), the
optimistic-no-rollback contract on persist failure, and
serialization of concurrent addEntity through the write queue.

vitest unit project was scoped to src/services only — widened
to src/store too, which also picked up the pre-existing
ui-history.test.ts that was sitting orphaned.
