[BUGFIX] Use the correct table name for `lastInsertId()` (#2355)

For Postgres, providing the table name actually makes a difference,
while SQLite, MariaDB and MySQL seem to ignore the provided table
name.

This change makes the functional test for `AbstractDataMapper`
pass on Postgres.

Also replace some PHPDoc type annotations in the touched tests
with PHPUnit asserts for stricter typing, and fix one of
those that was using on incorrect class name.

Fixes #2339
