revert(bb_nv_config): drop knot_en accessors (#217)

knot is a TaipanMiner-specific concern, not a breadboard primitive.
mdns_en stays — mDNS itself is breadboard infra. The TM-side knot
toggle will live in TaipanMiner's own config layer.

Reverts the knot_en half of #216.
