docs: rewrite README and add CHANGELOG for hardening release

Translate German notes, fix wrong option names (commit, not commitStrategy),
correct $filter syntax (Solr fq array, not Elasticsearch bool/must), drop the
unsupported $suggest section, quote dotted Solr keys in $params examples, and
align response shape (facets, QTime). Add CHANGELOG covering the v3.x security
defaults and the v2 to v3 migration steps.
