bench: cover transform configurations in log_event_make_bench

Adds copy_fields/kv_enrich/drop_fields/full-pipeline scenarios for both the
otel trace and edge log payloads, so realistic-shape per-transform cost
shows up alongside the existing baseline scenarios. KV inserts cover the
"project" key value in each payload so the kv_enrich rules actually fire.

Designed to be runnable before and after the parsed-virtual + put_at_path
perf changes, so the impact of those optimizations is measurable on the
realistic Supabase-shaped payloads instead of only on the synthetic
10-leaf body in test/profiling/transform_bench.exs.
