fix: include transform_drop_fields in Source Jason encoder list

The new field was added to the schema and changesets but missed in the
@derive {Jason.Encoder, only: [...]} list, which would silently omit it
from any JSON serialization of the source struct. Matches what
transform_copy_fields and transform_key_values already do.
