refactor(api)!: separate callbacks from GanttOptions into dedicated constructor parameter

Move all callback properties from GanttOptions to a standalone third
constructor argument. setOptions no longer accepts callbacks — they are
set-once at construction. Internal bridges translate old-style internal
callback shapes to the new public signatures with full data objects.
